Butternut Squash for Breakfast, 2 Ways

Serendipity. I discovered two new breakfast recipes this week when my Instacart shopper made a substitution. I was planning to make a sweet potato breakfast bowl that I saw on Mama Life Cooking. (Great You-Tube channel, by the way.) However, my shopper said that none of the sweet potatoes were ripe, and she substituted it for butternut squash. At first, I thought I would just use it as a side for dinner. But then I got to thinking, I could probably use the squash in a similar way, even though it isn't quiet as sweet. And, it does have many health benefits. So, after researching what flavors went with butternut squash and checking out what I had on hand, I came up with the following two meals. They are both easy and convenient, especially when you can repurpose squash leftover for dinner. I don't know about you, but we eat quiet a bit of the fruit during the fall. (Yes, I just learned it is actually a fruit!)


Butternut Squash Breakfast Bowl.



Directions:

  1. I used pre-cubed squash that just needed to be microwaved 3-4 minutes. You can of course make your own from scratch or use leftovers. Once the cubes are cooked, mash well.

  2. Add your fruit. I chose a sliced banana 🍌 and dried blueberries. I think dried cranberries or cherries would work just as well. Fresh blueberries would work also.

  3. Add your crunch. For texture, I used sliced almonds. Oats would be good too.

  4. Add your drizzle. I topped off this breakfast bowl with peanut butter 🥜and a bit of honey 🍯.


Butternut Squash with Egg and Avocado



Directions:

  1. Cook and cube your squash whatever way you choose, and season! (Remember. I had pre-cubed squash I just had to microwave.) This is a savory breakfast. If you have a favorite seasoning for squash use that, or simply salt and pepper.

  2. Slice avocado. 🥑

  3. Add a fried egg.

  4. Season a little more to taste. I felt salt and pepper really did the trick here.

  5. (Sliced tomatoes on the side might be good too!)

I told you, so easy! I hope you try butternut squash for breakfast one of these days and maybe add it into your breakfast rotation. If you can get your kids to eat it too, YOU ARE AWESOME!
