I wanted to make a muffin with not too much sugar, using ingredients I always have on hand. Something I can whip up in 5 minutes, and can do other things while it bakes. Pancake mix is great because I don't have to pull out the baking soda, baking powder or salt. Now, you can make pancake muffins with just mix and water then add a fruit to it, but these add a little protein with milk and eggs. The applesauce makes these moist without adding fat but also adds some more apple flavor. I also don't have to worry about what oils I have on hand, and I always have applesauce. One other bonus - everything can be mixed in one bowl and measured with one single 1/2 cup measuring device!
This recipe is also easy to memorize. I can definitely teach this to the kids and they can make it with very little help.

Ingredients for 12 Regular Size Muffins
2 1/2 cups of pancake mix
1 cup milk
1/2 cup applesauce (or one pouch may be a little more or less)
*We always buy unsweetened and the kids are totally fine with it! But use what you like.
1/2 cup of liquid egg whites (or 2 eggs)
* I personally just like using pastureized egg whites because its easier and cleaner with the kids.
1 apple, peeled and chopped (red or green)
A few shakes of Cinnamon
OPTIONAL - a pinch of brown sugar on the top of each muffin
(Plus whatever you use to grease your pans.)
Directions
Preheat oven to 375 and grease muffin pan(s). Or, use silicone muffin cups! No more muffin stuck to the paper and wasted.
Combine pancake mix, milk, applesauce and egg whites. Be careful not to over mix,
Fold in apple pieces.
Sprinkle on a few shakes of cinnamon.
Fill muffin tins 3/4 full.
I like to put a pinch of brown sugar on top of each muffin.
Bake for about 15 minutes at 375.
