Mini No Bake Apple Cheesecakes (Healthy-ish)

I wanted to make a fall dessert with the kids for college football opening weekend. (Go ND!) Apple season is here, so what better fruit to use. How great would it be to use apples you freshly picked yourself. (We plan to go apple picking as soon as the weather cools a bit here in Southern California. For more fall fun, read here.) While I was browsing Instacart, I happened across these mini graham crackers pie crusts. My boys love making their "own" individual treats. So I came up with these no bake apple cheesecakes with only 6 ingredients! Kids can help each step of the process without using the oven or messing with raw eggs. Even my 2 year old got involved. I also kept it relatively healthy without adding any extra sugar or caramel. Plus cream cheese and Greek yogurt are great sources of protein. This is great self-care treat moms can whip up for themselves as well!

Only 6 Ingredients:



Mini graham cracker crusts*

1 block of cream cheese

2 containers of caramel apple pie Greek yogurt or other fall flavor**

2 medium apples (chopped)

Whipped Cream

Cinnamon


*You can make your own crusts using butter and graham cracker crumbs. This may be healthier because there is probably less preservatives. I chose convenience this time but I may make my own in the future.


**The only caramel apple yogurt I could find was a light and fit product with artificial sweetener. I don't usually give my kids artificial sweeteners, but I think a little once in a while is OK.


Directions: (Makes 6 mini cheesecakes.)


1. Beat together cream cheese and yogurt.

2. Add in 1 chopped apple.

3. Scoop into pie crusts.




4. Refrigerate 2- 3 hours.

5. Toss the other chopped apple with cinnamon.*

6. Add apple and top with whipped cream.

7. Sprinkle cinnamon or apple pie seasoning on top.


*You can coat with sugar as well, but I chose to keep it on the healthier side. I kept the apple raw, but of course, you could cook them too.
