Ingredients:
1/2 of a large watermelon
6 small tomatoes
3 key limes juiced (Or 2 larger limes)
4-5 leaves of mint
Kosher salt (optional)

Directions:
Cut watermelon into pieces that will fit your food processor or blender.
Juice limes.
Blend watermelon, tomatoes, mint leaves and lime juice.
Place colander in a 9x11 casserole dish. Pour mixture in the colander.
When all the liquid has seeped through, remove colander.
Freeze for 3-4 hours. Rake with a fork every hour. (See video of my husband raking below.)
Serving
If you freeze overnight, set out about 10-15 minutes before serving. Letting it get a little juicy really increases the flavor.
You can sprinkle Kosher salt on at serving if you like salt on your watermelon. I know its controversial...but I really think it makes the dish!!
