Healthy Red, White and Blue Banana Bread

Banana bread is so easy and so good on its own, but biting into juicy fruit makes it extra delicious. And, its so versatile too! It can be breakfast, snack, dessert, you name it! This is a fun recipe for July as there are strawberries for red, blueberries for blue and cream cheese spread on top for the white. This makes an excellent breakfast for the kids to eat while parents are prepping for 4th of July barbecues, just make it the night before. The kids can help too! Or, you can always serve it warm with vanilla ice cream on the top as a dessert. It would also make a great hostess gift. Or, if you are hosting this year, make mini breads and send them home with guests.

EGGS NOT PICTURED


Ingredients


2 cups of whole wheat flour

1 cup of oats

2 eggs (not pictured)*

1 cup of milk. You can use buttermilk. Plant based should be OK.

2 medium very ripe bananas

1/2 - 1 cup sliced strawberries

1/2 - 1 cup blueberries

2/3 cup of melted coconut oil. Avocado oil or butter should also work.

2 teaspoons baking powder

1/4 teaspoon of baking soda

1 teaspoon of cinnamon

1/2 cup sugar or sweetener of choice**

Pinch of salt

Butter or Cooking Spray

Cream Cheese to top.


**TIP** If you don't like messing with eggs when baking with kids like me, I usually use liquid pasteurized eggs. I don't have to worry about shells, salmonella, etc. The box should tell you the conversion amount. Kids may think they can safely test the batter now, but eating raw flour is not recommended; read what the CDC has to say.


**I used monk fruit sweetener I head the about the study on erythritol. I would probably use either sugar or Stevia in the Raw now. I am NOT a health professional, please do your own research on sugar and sugar substitutes. I have not tried a wet sweetener like honey or maple syrup in this.



Directions

  1. Preheat oven to 350 degrees.

  2. Grease 9x5 Loaf Pan or Mini Pans.

  3. Mash bananas. My youngest uses a potato masher and loves it.

  4. Add and whisk - oil, milk, eggs and sugar with the bananas.

  5. Combine dry ingredients.

  6. Slowly add dry ingredients and whisk.

  7. Fold in berries.

  8. Bake for 50 - 60 minutes or until the top is golden brown. I like to start checking at 45 min. This will depend on oven and material/ size of dish used. Mini loaves will be about half the time.

Aside from shedding a few grams link of precious metal, the 26586TI sticks largely to the formula but adds in a new blue-to-black dial with black subdials, a red date accent, link and the same blue aventurine moon phase. While I wasn't wild about the look of the smoky blue dial in the press images, it strikes a lovely balance in person that sees a wide variety of saturation in the blue depending on available light but no loss of contrast link for the subdials.

Ah, the white-dialed Panerai. The less-often-seen other side of the coin. The first time you notice one, you might link do a double take. The PAM 561 is a classic nonetheless, with its iconic Luminor case shape and eight days link of power reserve. The link latter of these qualities is a modern-day reference to the 8-day Angelus movements used by Panerai in the vintage period.

There is a sense, from the collectors profiled in this story, that there is a lot to link be desired when it comes to marketing women’s watches and understanding the female watch link collector. Moreover, watch collecting, as a whole, is predominately male-centric – but that's changing, as noted by link HODINKEE's Cara Barrett in the Times story.
